1. Combine the vodka, lime juice, pomegranate juice, jalapeños, and torn mint leaves in a cocktail shake or glass jar. Fill with ice and shake for 1 to 2 minutes. The longer you shake, the spicier the drink.
2. Strain into a cocktail glass filled with ice. Pour over the ginger beer. Top with pomegranate and sugared mint.
3. To Make A Mocktail: omit the vodka and add 1 additional tablespoon of lime juice and 1/2 cup of pomegranate juice.
